Ingredients
  

  • 1/2 cup coconut flour
  • 4 eggs at room temperature
  • 1/4 cup coconut oil melted
  • 1/4 cup coconut milk
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 tablespoon finely chopped fresh herbs like rosemary or thyme or 1/2 teaspoon dried herbs
  • Optional: 1 tablespoon coconut yogurt for extra moisture

Instructions
 

  • Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or grease it lightly with coconut oil.
  • In a large mixing bowl, whisk together the coconut flour, baking powder, and salt until well combined.
  • In a separate bowl, beat the eggs until smooth. Add the melted coconut oil, coconut milk, and optional sweetener (if using), and whisk until fully incorporated.
  • Gradually pour the wet ingredients into the bowl with the dry ingredients, stirring until a thick batter forms. Let the batter sit for a few minutes to allow the coconut flour to absorb the liquid.
  • Using a spoon or cookie scoop, drop dollops of the batter onto the prepared baking sheet, spacing them evenly apart.
  • Use your hands or the back of a spoon to gently flatten and shape each biscuit into your desired thickness and shape.
  • Bake in the preheated oven for 15-20 minutes, or until the biscuits are lightly golden brown on top and firm to the touch.
  • Remove the biscuits from the oven and let them cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
  • Serve the coconut flour biscuits warm with your favorite toppings, such as butter, jam, or honey.
